Book a walk with a hotel curator for the backstory on Cullen and Kelly.

STEPPING OUT Hop on a tram and make for the National Gallery of Victoria, where the iconic Whistler's Mother is on loan from Paris' Musee D'Orsay until June 19. WHY WE LOVE IT The owners of this 1890s cottage had it transported to the site and have lovingly restored it. Think polished floorboards, white walls, shuttered windows and a wraparound timber deck with an inviting hammock where you can take in views of the lush garden and rolling countryside. Be sure to have dinner at least once cooked by hosts Kevin and Janice Pickles. Coco's has recently added a second bedroom to accommodate a small family or extra adult.

WHY WE LOVE IT This intimate one-bedroom, self-contained cottage is set in an old pharmacy at the heart of historic Millthorpe just outside Orange. The freestanding house is packed with character. There's a fully equipped kitchen, lounge area with retro pharmacy cabinet, cosy bedroom, and large bathroom with spa bath. To the back is a cute garden with barbecue, but my favourite spot is the front verandah looking over the charming township.

WHY WE LOVE IT Since it opened last year, The Loch has been quite the breath of fresh Ayr in the sometimes stuffy Southern Highlands. Brigid Kennedy, a noted Sydney caterer, and partner Kevin Nott, have transformed a set of stables into the bonniest of accommodations (with each of the elegantly decorated four rooms named after a Scottish city) on a hilltop above Berrima. Each Sunday, the couple welcome visitors and house guests alike to their own ambitious farm-gate, a mini-festival of fine food and the best local produce with the stables' now-vacated stalls festooned by antiques and bric-a-brac sourced by Nott.

STEPPING OUT Settled in the 1830s, Berrima, with its wealth of historic sandstone buildings, is regarded as one of the best-preserved Georgian villages on the Australian mainland. The main street (the Old Hume Highway) is home to Good Food Guide-rated restaurants such as Eschalot, Josh's Cafe and Bendooley Estate. Just over 20 kilometres from The Loch is the ghost town of Joadja, now home to a whiskey distillery.

WHY WE LOVE IT A multi-million-dollar refurbishment, management by Accor and a repositioning under the chic, slightly edgy MGallery brand, have given this resort a newfound buzz. Tennis, squash, billiards, outdoor and heated indoor pools, and a KidsZone are among distractions. Adults can escape to the spa or indulge in scrumptious high teas in the Sublime Lounge. Many rooms have views over the Jamieson Valley.

STEPPING OUT The resort is adjacent to Leura Golf Club, where views from the 14th hole are especially magnificent. Segway Blue Mountains operates through the resort's bushland. WHY WE LOVE IT In France, there are plenty of destination restaurants that also offer guests rooms to stay. That inspired chef James Viles to open Biota Rooms next to his acclaimed restaurant, Biota. The rooms are simple but the benefits are considerable: you get to explore the grounds where much of the produce is grown – and perhaps see the chefs picking the vegies for dinner – and after your meal, you can simply stroll home.

WHY WE LOVE IT The delights of chef Dan Hunter's farmhouse kitchen at Brae, in the Otway region of Victoria, are well-known to serious foodies. So too was the commitment required to sample them – a 90-minute drive down the Princes Highway from Melbourne. Now Hunter and his wife and co-collaborator, Julianne Bagnato, have created even more of an enticement: six stunning luxury suites. While there was always plenty of good B&B support for Brae in the nearby village, the on-site digs are an exquisite extension of Hunter's attention to detail, welcoming guests with bespoke textiles and artworks, fridges and bars stocked with rare wines and spirits and a breakfast of baked goods from the kitchen.

STEPPING OUT The Great Ocean Road is not too far away, but loitering awhile in the Otways is a pleasure in itself. The rainforest rises are home to sweet villages, including Forrest, where the Forrest Brewing Company continues to grow in reputation for its fine frothies. The drive between Geelong and Birregurra offers some interesting wineries around Waurn Ponds, including the great cellar door and restaurant at Mount Duneed.

WHY WE LOVE IT The massive sculptures in the deep red lobby set the flamboyant tone of this art-filled hotel, which features owner Chris Parkin's collection of contemporary art and outrageously fast motorbikes. Don't skip the French-style breakfast: nab a window seat and admire Wellington's sparkling harbour. The hotel, which is revelling in an $8 million refurbishment, will be brought into the equally arty QT Hotels stable in August.

STEPPING OUT Te Papa, New Zealand's national museum, is right across the road. Pop in to find what makes Kiwis tick, then wander the foreshore down to Queen's Wharf to scoff local oysters and the city's best craft beers. To mix art and adventure, hire a bike and cycle the foreshore down to the Weta Cave to the workshop where the Lord of the Rings creative magic happens.

WHY WE LOVE IT The 140-room, contemporary hotel is at the edge of the Parliamentary Triangle, but is a great choice for families. The East two-bedroom apartments interconnect to the Kids Cubby, kitted out with bunks, bean bags, kid-sized furniture and an Xbox360, as well as full kitchens, and sleeping up to five. Laid-back Joe's Bar is a cocktail hang named after the owners' dad, and taps into his Italian heritage. Beside it is Muse restaurant and bookshop, with intriguing titles, a great wine list and a $10 lucky-dip book box.

STEPPING OUT Dress up like the Queen, fly an Iroquois helicopter, build a time-travelling robot or see life through the many eyes of a spider: Canberra is great for tots and teens. WHY WE LOVE IT This recently opened 20-hectare spread, with a pool that's an event in itself and  subtly luxurious villas all featuring big egg-shaped baths, has not only already hit the perfect barefoot luxury note, it's maintained a sense of connection to its  stunning surroundings. Guests wake up to a cacophonous bird call – there's a sanctuary right next door. All night, you hear the waves crash from the famous easterly coastline just past the fence. And you only have to walk out the gate and onto the sand to see Byron's iconic lighthouse, feel that squeaky white sand underfoot and chat with a friendly Byron local, who chances are, will wish you the peace and good vibes for which the area is renowned.

WHY WE LOVE IT For those times when you crave wilderness but don't want to camp (or spend a fortune), these cabins at the entrance to New England National Park on the Waterfall Way, near Ebor between Armidale and Dorrigo in north-western NSW, are just the thing. Comfortable rather than flash, they have a workable kitchen, wood-fired heater and two bedrooms, one with two sets of bunks. It's always cool on the plateau, so it's perfect place to snuggle up for a few days playing board games, reading or sitting on the deck watching the mist roll past.

STEPPING OUT Lace up your hiking boots and hit one of the half-day trails through the mossy rainforest of New England National Park and soak in the view from Point Lookout – you're usually above the clouds here, but if you are lucky enough to be there on a clear day you can see all the way to the coast. WHY WE LOVE IT One of four national park-owned and run cottages, Imeson Cottage is the smallest and sweetest of the bunch located in the stunning Cape Byron State Conservation Area. The two-bedroom property  is every inch the classic Aussie beach house, with 180-degree views of The Pass, one of Australia's premier surf breaks. George Imeson originally built his cottage for "the kids to use as a holiday house". Today Imeson has been completely renovated, but retains the charm and feel of beach holidays harking back to simpler times.

WHY WE LOVE IT This legendary outback stop on the B83 road through the Flinders Ranges forms a huddle with an airstrip, radio mast and motly assortment of caravans. Yet the hotel and pub are surprisingly chic, with art-hung walls, terrific outback food (think goat curry and kangaroo-tail soup) and a welcoming ambience created by owners Ross and Jane Fargher. Just the place for travellers to refresh and swap stories from the road.

STEPPING OUT Scenic drives through the Flinders Ranges include the 100-kilometre loop around Bunyeroo-Brachina-Aroona, where Razorback Lookout provides one of the South Australian outback's best views. WHY WE LOVE IT Where to start? We love its elegant neo-classical exterior, and its surprisingly pared-back interiors. We love the oversized rooms and the indulgent Shambhala spa. We love starting the day with quinoa porridge at the Post restaurant, overlooking one of Australia's most glamorous hotel spaces, the Postal Hall; we love ending the day with wild fish in squid ink brioche at the rooftop restaurant, Wildflower. If we have time in between for a vino in the laidback Lounge, so much the better.
