The juicy ripeness of a nectarine or mango, dipped in sugar and butter and grilled on the barbecue makes for a light and moreish end to a Boxing Day barbecue.

Grilled summer fruit
- Nectarines or mangoes (amount varies depending on the number of guests)
- Brown sugar
- Butter
- Ice cream and cream
Method:
►Halve and seed the ripe nectarines (or if you are feeling really indulgent use mangoes)
►Make a paste with equal parts brown sugar and butter. Dollop a teaspoonful on each half a nectarine or mango.
►Grill for a few minutes until the butter/sugar mix caramelises.
►Serve with vanilla ice-cream and cream.
PS: Put another lot under the grill because everyone will want more.
