Emergency services were called to Delungra Road near Bingara, following reports a truck containing produce left the road before hitting a number of trees and rolling onto its side.
Police have said the driver and only occupant - a 66-year-old man - remains in a stable condition.

A man has been airlifted by the Westpac chopper following a truck crash near Inverell.
At about 1.50pm on Wednesday, the NSW Ambulance called in the Westpac Rescue Helicopter Service (WRHS) to assist after an accident on the Bingara Road, about 60kms west of Inverell.
He had been trapped for a short period of time before he was released by emergency services, according to a WRHS report.
The man was left with head and leg injuries following the accident.
The man was treated on scene by NSW Ambulance paramedics and the Helicopter Critical Care Medical Team, before he was airlifted to Tamworth Rural Referral Hospital for further treatment.
He was in a stable condition.
